White fish gremolata & green beans
Elevate your weeknight dinner with this super simple but vibrant white fish dish with gremolata, & crisp green beans.
Ingredients you’ll need:
White fish
White fish: Any white fish will work! I used cod this time around.
Course sea salt
Black pepper
Lemon zest
Olive oil
Gremolata
Olive oil
Parsley
Mint

Macadamia nuts, crushed
Macadamia nuts
Macadamia nuts: I bought whole Macadamia nuts, toasted, and crushed them with a knife.
Green beans
Green beans: Remember to cut the tips off!

Equipment you’ll need
Charcoal
Oak
Charcoal grill or live fire table

Tongs- I prefer to use Donkey long tong.
Cutting board
Cast iron
Mixing bowls: One for the gremolata, one for the green beans!
FIRE UP THE GRILL
Once the coals are lit, or your wood is down to embers ensure they are evenly distributed throughout the grill surface. For this cook, I used a direct heat. This was a quick cook and direct heat was the best way for an even cook throughout the fish.
You can also indirectly cook the fish. Move all the coals to one side and place the fish on the side without heat. The fish will essentially smoke through the residual heat from the other side leaving you with a beautifully smoked piece of fish.
PREPARE THE GREMOLATA
Give all of the ingredients listed above a rough chop, and toss into a mixing bowl. Make sure the olive oil at least coats the top of the ingredients. Add the seasoning’s and don’t forget it’s okay to adjust to your preferred liking.
In my experience, chopping fresh herbs enhances the aromatics far more effectively than using a blender. This goes for sauces such as gremolata, chimichurri, or pesto. The flavors of the herbs meld together beautifully when chopped, creating a depth that simply isn't achieved when blended.
COOK THE GREEN BEANS
In a mixing bowl add all of the ingredients listed above. Give everything a nice toss and let them cook to your preferred tenderness on the cast iron. Do not make the same mistake I did and think that green beans will not fall through the grate, they will.
With any fresh vegetable I enjoy when they have a nice char but also still have crunch. That being, this cook is hot and quick.
THE MACADAMIA NUTS (recommended but optional)
Finely chop the macadamia nuts, toast over a low heat until golden brown. Remove & use as a garnish.
COOKING THE FISH
Pat the white fish dry with towels and season both sides generously with salt, pepper, garlic powder and lemon zest.
White fish is extremely delicate and is recommended to cook on a flat surface like a cast iron instead of directly on the grill grate.

Ingredients
White fish
8oz white fish (cod or mahi mahi)
1 tablespoon course sea salt
½ tablespoon pepper
zest from one lemon
Gremolata
½ cup olive oil
1 tablespoon chopped shallot
1 tablespoon minced garlic
Zest from one lemon
1 tablespoon lemon juice or juice from one lemon
¼ cup chopped parsley
½ cup chopped mint
Green beans
1 cup green beans
1tbs olive oil
½ tablespoon salt (or to taste)
½ tablespoon pepper (or to taste)
4 cloves garlic, crushed
Garnish
¼ cup crushed macadamia nuts (toasted)
Instructions
Fire up the grill -We will be using direct heat for this recipe.
Prepare the Gremolata -Roughly chop all the gremolata ingredients and place them into the mixing bowl.
-Coat all of the ingredients with olive oil
-Season with the salt, pepper and garlic powder.
-Optional but recommended: Lemon zest or orange zest.
Cook the Green beans-In a mixing bowl combine the green beans, olive oil, salt, pepper, and crushed garlic. Cook hot and fast for about 2 minutes or until lightly charred.
Cook the fish -Pat the white fish dry with paper towels. Season both sides generously with salt, pepper & garlic powder. Place the fish directly onto the grill or a flat cast iron for about 4 minutes on each side or until the fish begins to flake easily.
Prepare the Macadamia Nuts (optional)-Finely chop the Macadamia nuts & toast until golden brown. Use as a garnish.
Assemble
Plate the grilled fish and green beans
Spoon the gremolata over top the fish
Sprinkle the toasted Macadamia nuts over top
Enjoy!
